Help!

I'm trying to figure out what I want to cook for dinner. Any suggestions? Recipes? Alms for the poor?

  2. Ha Ha! Just wrote about the same thing today :) Ended up making some sort of chicken/veg/pasta bake. Hope it works!

  3. I just took out a chicken...but it's a whole chicken and I'm lazy so I'm thinking of Chicken and Dumplings.

  4. I was going to say make some chicken nuggets. Buy a bag of sour cream and onion chips...

    Cut up chicken into strips or nuggets. dip them in egg+milk ( i usually season my eggwash). Then roll in the crunched up sourcream and onion chips. place on a baking sheet over parchment paper. Drizzle some melted butter over them and bake for 20 minutes. Make some quick mashed potatoes and steam veggies. you've got yourself a meal.

  5. You apparently are a bit of a mind-reader as I was thinking pretty much the same thing here -what shall I prepare to feed the angry horde here? Well, okay -"horde" is a bit of an exaggeration as it will probably just be me, the two little ones, maybe the 18-year-old and one never knows if the SIL will appear for supper or not! My problem is what to fix that the two little ones will eat. We had pancakes and sausage last night at our church's Shrove Tuesday dinner and pancakes is usually a good supper choice for the kids but two days running would be pushing that. THeir other food choices that usually will be eaten -mac'n'cheese or chicken nuggets or tenders. Variety is not the spice of their young lives apparently. So what to fix remains the big question in the back of my mind and since nothing is coming through there, I think I'll go embroider!

  6. YES! Tex-Mex summer squash casserole- easy and DELICIOUS AND healthy! Ingredients
    2 1/4 pounds of summer squash , quartered lengthwise and thinly sliced crosswise (about 10 cups)
    2/3 cup of finely chopped yellow onion
    1 4-ounce can of chopped green chiles
    1 4-1/2-ounce can of chopped jalapenos (about 1/2 cup), drained
    1/2 teaspoon of salt , or to taste
    2 1/4 cups of grated extra-sharp Cheddar cheese (about 7 ounces), divided
    1/4 cup of all-purpose flour
    3/4 cup of mild salsa
    4 scallions , thinly sliced, for garnish
    1/4 cup of finely chopped red onion for garnish
    Directions
    1. Preheat oven to 400°F. Coat a 9-by-13-inch baking dish with cooking spray.
    2. Combine squash, onion, chiles, jalapenos, salt and 3/4 cup cheese in a large bowl. Sprinkle with flour; toss to coat. Spread the mixture in the prepared baking dish and cover with foil.
    3. Bake the casserole until it is bubbling and the squash is tender, 35 to 45 minutes. Spoon salsa over the casserole and sprinkle with the remaining 1 1/2 cups cheese. Bake, uncovered, until golden and heated through, 20 to 30 minutes. Sprinkle with scallions and red onion.

    Jeni, pancakes are always a sure winner in my house (except for my husband even though I use the SAME exact batter to make his waffles!).

  8. Well when faced with a whole chicken and no inspiration I usually do the ol' dead bird dinner. Roasted chicken and mashed potatoes. Yeah, I know not real inspiring but it works.
